Ingredients
  

  • 2 lbs ground beef or turkey
  • 1 large onion diced
  • 2-3 cloves garlic minced
  • 1 bell pepper bell pepper diced
  • 28 oz canned diced tomatoes undrained
  • 6 oz tomato paste
  • 15 oz kidney beans drained and rinsed
  • 15 oz black beans drained and rinsed
  • 4 cups beef or vegetable broth
  • 2-3 tablespoons chili powder adjust to taste
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1 tablespoon olive oil

Instructions
 

  • Dice onions, garlic, and bell peppers. Rinse beans.
  • Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef or turkey and brown. Drain excess fat.
  • Remove meat and set aside. Add onions and garlic to the pot; cook until fragrant. Stir in bell peppers and cook until softened.
  • Add canned diced tomatoes, tomato paste, and broth. Stir to combine.
  • Return meat to the pot. Add kidney and black beans, and any additional vegetables.
  • Stir in chili powder, cumin, paprika, oregano, salt, and pepper.
  • Reduce heat and simmer for at least 30 minutes, stirring occasionally, to allow flavors to meld.
  • Taste and adjust seasonings as needed. Add a pinch of cayenne pepper for more heat or a teaspoon of cocoa powder for depth.
  • Serve hot, topped with shredded cheese, sour cream, diced avocado, or fresh cilantro.

Notes

Adjust spices to taste. For a sweeter chili, add a teaspoon of brown sugar or honey. Add a splash of apple cider vinegar or lime juice near the end for acidity. Slow cooking enhances flavor. To make vegetarian, skip the meat and add more beans and vegetables.
